Until recently I didn’t know anything about the slow food movement apart from the fact that it is a nice Instagram hashtag.
These days I am reading a lot about food, cooking, physics and chemistry of food, history, and everything else related to the topic. Having started with the history of cuisine I have learned that the slow food is actually a movement that has started in 1986 by Carlo Petrini. He started it as a protest to the opening of McDonald’s restaurant in Rome.
Three years later delegates from 15 countries gathered in Paris to create the Slow Food Manifesto. It is “promoted as an alternative to fast food, it strives to preserve traditional and regional cuisine and encourages farming of plants, seeds and livestock characteristic of the local ecosystem”.
